Hot Passion :: Sweet and Spicy Glazed Edamame

Great appetizer or a healthy snack.  The sweet, tangy and spicy glaze on the edamame will make you come back for more.  It’s hard to stop eating them.  Make sure you make a large batch it goes fast, easy to double the recipe.    

INGREDIENTS

  • 2 cups frozen edamame in their shell, thawed
  • 1 teaspoon canola oil
  • 1 clove garlic, finely grated or minced
  • 1/2 teaspoon fresh ginger, skin removed, finely grated or minced
  • 4 tablespoons Hot Passion Jelly
  • 2 tablespoons water
  • 2 teaspoons rice vinegar (optional)

INSTRUCTIONS

  1. Heat canola oil in a medium skillet over medium-low heat. Once heated, add the garlic and ginger, stir a few times, then add the Hot Passion Jelly, water and rice vinegar. Cook for 2 minutes. 
  2. Add the edamame, let cook, stirring frequently, until the sauce glazes the edamame, about 5-7 minutes.
  3. Use tongs to plate edamame. Pour any glaze left in the saucepan over the edamame.  You will agree, it’s Ono.  Enjoy.
